Celebrate the Shortest Day with Festive Baking

Early this morning (December 21, 2024) winter solstice happened. It is giving us the shortest day of the year and the longest night. That, combined with a snow storm, means staying in and finishing up the last of the Christmas baking.

We’re going to have a white Christmas this year – the first time in several years! There’s something about snow early in the season that is joyful – all of the muck and mud from fall rains is hidden beneath a pristine blanket of snow. It’s also the time of year that makes us long for cozy evenings by the fireplace, hot beverages, sweet treats and peace by the light of the Christmas tree. This is what I wish for everyone I hold dear.

Since we’re staying inside today I decided to experiment with a new cookie recipe provided by my friend and fellow photographer #SylvieMazerolle. Her details can be found on her blog website at https://sylviemazerolle.com/blog/when-lemon-met-coconut-a-cookie-love-story and is a gluten free version. I made the full flour version.

To start with, assemble ingredients and tools.

Then, follow the recipe to create the scrumptious cookie dough.

This recipe yielded 2 1/2 dozen 1.5″ cookies.

When they were all done, the sampling began. They are husband, dog and cat approved so that’s a good thing!

While I was waiting for the cookies to come out of the oven I checked on our local “herd” of birds. We have Blue Jays, Doves, a male and female Cardinal couple, some sparrows, chickadees, pesky starlings and loud crows that come to our buffet. With the snow falling steadily, they sought refuge under the roof of our deck this morning.

While the cookies were cooling I used my remaining lemon zest and juice to make a lemon bread – no scurvy in our house! My only regret is that other than my husband and I there’s no one visiting to share all of these goodies with. Nevertheless…
